Ingredients:

For the Cholar Daal (Split Black Gram Lentils):

* 1 cup Cholar Daal (split black gram lentils), rinsed thoroughly
* 3 cups water
* 1 small bay leaf
* 1/2 teaspoon turmeric powder
* 1/2 teaspoon ginger paste
* 1 green chili, slit
* 1/2 teaspoon cumin seeds
* A pinch of asafoetida (hing)
* 1 tablespoon Rice Bran Oil
* Salt to taste
* Fresh coriander leaves, chopped for garnish

For the Luchi (Puffed Flatbreads):

* 2 cups maida (all-purpose flour)
* 2 tablespoons Rice Bran Oil for dough (moyen)
* Water as needed to knead soft dough
* Rice Bran Oil for deep frying

Instructions:

Prepare the Cholar Daal:
1. In a pressure cooker, combine daal, water, bay leaf, turmeric, ginger paste, and salt. Pressure cook for 4-5 whistles until tender.
2. In a small pan, heat 1 tbsp Rice Bran Oil. Add cumin seeds and hing. When seeds splutter, add slit green chili.
3. Pour this tempering into cooked daal and simmer for 5 minutes. Garnish with coriander.

Prepare the Luchi:
1. In a bowl, mix maida and 2 tbsp Rice Bran Oil until crumbly. Gradually add water to form a soft, smooth dough. Cover and rest for 15 minutes.
2. Divide dough into small lemon-sized balls. Roll each into thin circles.
3. Heat Rice Bran Oil in a deep kadai. Deep fry each Luchi on medium-high heat, pressing gently until fully puffed and golden.
4. Serve hot with warm Cholar Daal.
